Sima: Locality, small Cycladic production, tradition and quality in your plate or glass

    Traveling is not about “escaping”. It’s about getting closer. Okay, travelling is a million other things, but in the context of big, emotional, philosophical statements, we travel to arrive to a destination closer to ourselves, rediscover ourselves on the island, through a dejá vu flavor we will savor, in a dish made of pure, local ingredients. We travel to see our loved ones and enjoy their company, in a quieter place, leaving out anything perplexing that will burden us from enjoying each other’s stories and the food we share. We travel to get to a place we love.

    This is how simà was born, which means “close” in Greek: A place that offers exclusively, and carefully hand-picked local ingredients, to cook all the meals we offer from breakfast till dinner. That is the way to enjoy quality local wine and cheese. Seasonal vegetables and legumes grown in the Aegean islands, bought fresh and cooked to the perfection that is local cuisine. Afterall, food tastes best where it flourishes and grows naturally. The hand-selected, locally and traditionally grown raw materials are the best one can find. The food and drink you’ll be offered has not travelled far, for you have travelled all the way to Pyrgos to savor it, or as we like to say, you’ve come simá.

    On the five-star culinary map of Tinos, simà is one of the brightest stars: Its action begins with an exuberant breakfast, served from 10 with Area51 coffee, which includes options with eggs such as kayanas, omelette sandwiches, vegan sandwiches with hummus made from artichoke, yogurt with peanut butter and honey from Chios, and sweets such as milk pie, all elegantly presented.

    Then there are its main dishes encouraging sharing: you will find fried artichokes with Kozani yolk, you wouldn’t believe that artichokes could be so full of flavor and texture. Then you’ll order another artichoke, along with black-eyed beans with salt and mackerel and “ladenia” a local delicacy of Kimolos with Tinian tomatoes. And another wine. The tomatoes are bursting, the salad with salt and mackerel has the taste of the island and you are aware of it, here every taste is genuine, it is authentic, made to tell an old story from somewhere around here, in a fresh way, and to married ideally with the right wine.
