Liotrivi – Olive Press: Timeless value in Spetses, with a high gastronomic profile

    “Our cultural, historical and gastronomic heritage is like the roots of a tree. At its roots the tree rests to stand upright and from its roots it grows and triumphs”, Kanakis Geronymakis, the Sfakian folklorist, once said. An apt remark that in our time is more relevant than ever.

    Liotrivi knows these values ​​well. And he honors them. It is housed in one of the oldest buildings in the Old Port, which dates back to the mid-1800s. An olive mill on the island in a central position, since the distribution of oil was done by boats. In 1998 it was taken over by George Kiousis, who took care of it and renovated it, making it since then a classic, with spaces of wonderful aesthetics, tables that spread on am idyllic pier overlooking the blue sea, and a kitchen that upgrades every aspect of the Mediterranean cuisine, serving refined and delicious dishes with raw materials from the island and the wider area.

    Among the specialties that the visitor must definitely try, is the magical ala Spetsiota, a traditional local recipe where a fish fillet is baked in the oven with fresh tomato, garlic, parsley and wine, the insurmountable tuna tartare, in a secret marinade served with white and black sesame seeds, the fresh ravioli stuffed with lobster. Every treasure of the sea comes from local fishermen every day, while its meat is also of particular interest, with premium cuts such as American tagliatelle, Uruguayian rib-eye, picanha, Australian Tomahawk, t-bone, etc. It is worth mentioning that all the above are grilled in a josper oven, the only one on the island.

    Another undoubted trump card is its bar and wine cellar, which houses over 50 labels in rum and 20 in gin, mixes all our favourite cocktails to perfection, and sets each of our dishes with a refreshing, invigorating glass. On the wine front, 200+ selections in Greek vineyards and domestic varieties but also excellent selections from emblematic vineyards abroad, it is a given that they will satisfy every wine requirement to the fullest. It is open from April to early November.
